Bright white or deep magenta flesh, speckled with tiny black seeds, with a mild sweetness and a clean, refreshing flavour that is somewhere between a kiwi and a pear. Dragon fruit is available year-round from tropical growing regions. It is at its best when the skin has started to soften slightly and shows a little give when gently pressed. Firm, waxy-skinned fruit needs more time to ripen.
Look for fruit that is evenly coloured with bright, healthy skin and no significant shrivelling or brown patches. Leave firm fruit on the bench for a day or two. Avoid any with heavily wrinkled or damaged skin.
Halve and scoop out the flesh with a spoon, slice into a fruit salad, blend into a smoothie, or cube onto an açaí bowl. The seeds are completely edible and add a gentle crunch.
